A pasta grocery, a working factory behind glass, a small cafe, and a classroom — all under one roof. Opening summer 2026.
The idea
Our pastificio is part shop, part workshop. Walk in for fresh pasta cut that morning, watch the extruders running through the window, and pick up the olive oil, tinned fish, and tipo 00 flour to finish the dish at home.
Stay for an espresso and a panino at lunch, or sign up for an evening class and roll your own tortellini.
Classes

Grocery
Tagliatelle, ravioli, agnolotti, trofie, pappardelle — cut that morning, plus dry shapes and our extruded line for the pantry.
To-Go
A short lunch menu of pasta to-go, Italian sandwiches on house focaccia, and a daily soup. Built for the walk back to the office.
Gelato
A small case of seasonal gelato and sorbetto, made with northwest fruit and proper Italian technique.
Caffè
Italian-roasted espresso, cappuccino in the morning, caffè corretto in the afternoon. Standing room at the bar.
Pastificio
Our production floor sits behind a glass wall in the middle of the shop. Come in any morning and watch the day's pasta come off the line.
